2ND PLACE WINNER
Three school age children make for a busy cook, but this cook loves every minute of it. She's Mrs. Richard Walker and her winning recipe is "Taco Salad".
Originally from Tacoma, Washington, she has lived in Costa Mesa for the past 10 months. When not engaged in housework, she likes to swim and play tennis. To broaden her education, she is taking a course at Orange Coast College.
1 small head lettuce, shredded
1/2c shredded cheddar cheese
1 small onion, chopped
10oz can stewed tomatoes
1lb ground beef
2-3T taco sauce (optional)
5oz package corn chips or tortilla chips.
Place shredded lettuce, cheese and onion in large salad bowl. Drain stewed tomatoes well. Save juice. Add tomatoes to salad mixture in bowls. Brown beef, pour off grease. Add juice from tomatoes and taco sauce and simmer for 5min. Add this mixture to salad bowl along with broken up corn chips. Toss lightly. Serve at once.
