Chinese-Hawaiian Barbecue Ribs

1 green ginger root
1/2 clove garlic
1/2c soy sauce
1/2c catsup
3/4c sugar
2oz sherry
1t salt

Crush ginger and garlic, blend remaining ingredients. Rub into young pork ribs and marinate 3 hours. Place ribs on rack in 325°F oven and cook 3-4 hours then barbecue to get crust.

Sauerkraut & Polish Sausage

1.5lbs polish sausage
1 jar (homemade brand) sauerkraut
2 pipin apples sliced thin (peeled)
4T brown sugar

Spread sauerkraut in casserole dish that has a lid. Top with apples and brown sugar. Simmer on top of stove with lid on for 20 mins. Cut sausage into 6" lengths and split down center. Place on top of simmered Kraut and apples. Cover and simmer another 25 minutes. Serve with french bread and sliced jack cheese.

Dice up ham. brown in hot oil w/ pineapple chunks (save juice for sauce)

have sliced celery, fresh mushrooms, green pepper, green onion for vegs.

Make sauce w/ cornstarch, little soy sauce, pineapple juice, brown sugar (little)

Vegetable Pork Stir-Fry

1lb lean boneless pork loin
2t oil
2.5T soy sauce
1 clove garlic, minced
2 carrots, peeled and cut diagonally
1T grated fresh ginger
2t red wine vinegar
1 sweet red or green pepper, julienned
2 small yellow squash, sliced
2 small zucchini, julienned
1/2c sliced green onions
6oz snap peas
2c broccoli flowerets
2/3c beef stock
1/3c dry white wine
1T cornstarch
1/2t sugar
cooked rice

Make sure pork is cold to make cutting easier. Cut across grain into 1/4" strips. Combine 2T soy sauce, garlic, ginger vinegar 1t cornstarch and pepper; mix well and pour over pork. Cover and marinate in refrigerator 4 hours or overnight. Pour oil around top and sides of preheated wok; heat for about 2 minutes at medium high. add marinated pork (undrained) to wok; stir fry for 3 minutes. Add carrots and red pepper; stir fry for 2 minutes. Add yellow squash, zucchini and green onions, stir fry for 3 minutes. Add peas and broccoli and continue stir frying for 2 minutes. Combine beef stock, wine, 1T conrstarch, remaining 1/2 T soy sauce and sugar; pour over pork and veggies. Stir-fry over medium heat for 3-5 mins until sauce is thickened and bubbly. Serve over rice.

Green Chili Stew

2.5lbs boneless pork butt
2 cans chicken broth (14.5oz)
1 can (16oz ) tomatoes
2 large diced green chiles
1t ground cumin
1/4t each crush red pepper & pepper
1/2c water
1/4c flour
fresh cilantro

Trim off fat, cut into 1" cubes. In large kettle, evenly ln. pork. Add broth, tomatoes (broken up), chiles, cumin, peppers. Cover and bring to boil, reduce heat & simmer about 1.5hrs. Blend water w/ flour & stir into mix. Garnish w/ cilantro. Serve w/ buttered flour tortillas.

Sausage & Veggies over Polenta

1.5T olive oil
10oz fresh turkey hot italian sausage
1 med. onion, sliced
1 med. green pepper, sliced
1 med. red pepper, sliced
1/2c white wine

heat 1/2T oil over med or low heat. Add sausage, cover skillet. Cook about 11-12 mins, turning until browned. Transfer out, increase heat, add remaining oil add veggies and saute about 5 mins until lt. brown. return sausage, add wine and simmer about 5 mins. Serve over Polenta:

2.5c water
2/3c yellow cornmeal
1/2t dried basil or fresh
1c grated cheddar cheese or parmesan

lightly grease 9" round pan. 1c water & cornmeal in small bowl. Remaining water boil in a saucepan. Stir in cornmeal mix. Cook over low heat until polenta boils and is very thick, stirring about 6 mins. Mix in 1/2c cheese, season w/ S&P. Spoon into pan, sprinkle remaining 1/2c cheese over. Prepare 2hrs ahead of time. Let stand @ room temp. Preheat broiler, broil 5" from heat until cheese bubbles and polenta browns on all edges. Cool 5 mins.

Sausage Bake

Don't cook sausages more than 7-8 mins after par-boiling & baking. Calentino's hot and mild italian, johnsonville brats

Need more white wine than red (Pinot Grigio good white)

Instead of pasta salad, have baked veggies, green salad (LOTS) w/ walnuts and craisins - lots of sauerkraut. Rolls from Ralph's. Put in paper bag and heat GOOD (sliced and buttered)

Sausage

6-7 mins cooking time after soaking brats in beer, water & onion that's boiled for 15 mins. Par-baking turkey hot and mild italian in 350°F for 15 mins.

Nana Angie's Pizza Dough

4c REAL warm water
3pkg dry yeast (not rapid rise)
1/4c sugar

(Don't stir, wait about 5 mins, will come to a foam.)

The stir in 1/2c oil & slowly add flour & mix with big spoon until you can't anymore. Then put dough on floured board and knead until not sticky. Let rise 1 hour.

Baked Tomato Spaghetti

12 med. size firm ripe Roma Tomatoes
S&P
3-6 cloves garlic, minced
1/2c chopped parsley
1/2c olive oil
1 lb spaghetti
2T marg at room temp
1/2c fresh basil or 2T dry basil
Parmesan

Cut tomatoes in half lengthwise & set cut sides up in 9x13 baking dish. Sprinkle w/S&P. Mix garlic, 1/3c parsley & 2T oil, put mix over cut tomatoes. Drizzle 2T oil over. Bake @ 425° until browned on top (60-70 mins). Cook spaghetti til al dente.

In warm serving bowl, combine butter, remaining parsley & oil, basil & 4 tomato halves. Remove most of skin from halves. Coarsely mash. Add pasta & mix. Add remaining baked tomatoes & pan juices. Gently mix, adding S&P and cheese.

Puffy Chile Relleno Casserole

2 cans (7oz each) whole green chiles
4 corn tortillas cut into wide strips
1lb jack cheese, shredded
1 lg. tomato, sliced and seeded
8 eggs
1/2c milk
1/2t S&P, cumin & garlic powder
1/4t onion salt
paprika

Remove seeds from chiles. Lay 1/2 chiles in bottom of well greased 9" sq. baking dish. Top w/ 1/2 tortilla strips & 1/2 the cheese. Arrange tomato slices on top. Repeat layers using up rem. chiles, tortillas & cheese. Beat together eggs, milk, S&P, cumin, garlic & onion. Pour evenly over casserole. Sprinkle lightly w/ paprika. If made ahead, cover & chill.

Bake uncovered in 350°F oven for about 40 minutes (1 hr. if cold) or until puffy & set in center. Let stand 10min before cutting into squares.

Pasta e' Fagioli

1c dried navy or pea beans
salt
1/2pkg shell macaroni
3T olive oil
2c sliced thin carrots
1 lg onion, chopped
1c chopped celery
1 clove garlic
2c diced peeled tomatoes (1 lb)
1t dried sage
1/2t dried oregano & basil
parsley

Combine beans with 6c water, refrig. overnight.

Boil beans w/salt, simmer covered till done - about 1.5-2hrs. Stir several times. Drain, reserve 2.5c liquid. Cook & drain macaroni (not too tender). In hot oil saute onion, carrots, celery & garlic, cover until soft - about 20 mins. Add tomatoes, seasonings, cover, cook f/15 mins. Combine all & liquid, cover, simmer 35min (add macaroni at end).

Risotto a la Milanese

1/4t pdr. saffron mixed w/ 1/2c stock
5T butter
1/3c minced onions
2c arborio rice
3/4c dry white wine
6c stock (or as needed)
4 more T butter
1c parmesan cheese

Saute onions in butter about 10 min w/o burning. Add rice & cook, stirring 1-2 mins. Add wine & boil until absorbed. Add saffron mixture & about 3c of stock & cook, uncovered over med-hi heat until absorbed. Keep adding stock occasionally & cook as before until liquid is absorbed & rice is tender. Stir in the additional butter & 1/2 of parmesan cheese. Serve rest of cheese on side.

(*ED NOTE: Best to boil the 6c of stock so that it's absorbed easier. Make sure the 1/2c of stock is lukewarm to absorb the saffron better. Also, stirring often is recommended.)

German Pizza

Melt 4T butter or marg. in 10-in skillet. Add 3c loose-pack frozen hash brown potatoes; 1/4c EACH chopped onion & chopped green pepper; a sprinkling of salt & pepper. Stir to combine. Cover; cook over low heat about 15 min, stirring once or twice. Pour 4 slightly beaten eggs evenly over potatoes. Arrange spoke fashion 1 12-oz can luncheon meat, cut in 3/4 x 3.5" sticks over top. Cover, cook over low heat about 10 mins until eggs are set. Sprinkle with 1/2c shredded sharp process amer. cheese. cover till cheese melts. cut in wedges. makes 5-6 servings.

Russian Dressing

1/2c sugar
1/2c vinegar
1/2c catsup
1c salad oil
1t salt
1/2t pepper
1/4t dry mustard

Mix in blender with small chopped onion, store in jar in ref. with clove garlic

Cook slightly (1-2min):
package frozen peas
pkg. green beans (small short sliced)
package tiny lima beans

Drain WELL - chill

cut up zucchini in tiny pieces and put in and chill overnight.

Have dish of thousand island dressing or similar thick dressing in middle dish - green salad around w/ cherry tomatoes forming an outside ring

Greek Salad

1/3c olive oil
1/4c lemon juice
3/4t dried oregano, crushed
1/2t salt

8c torn mixed greens
2c cherry tomatoes, halved
1 med cucumber, sliced
1c sliced radishes
1/2c sliced pitted ripe olives (get fresh GREEK olives)
1/2c sliced green onions
1/4c snipped parsley
8oz. feta cheese, crumbled

Dressing: combine oil, lemon jc. oregano, S & 1/4t pepper in jar. Cover, shake well. Chill.

Salad: greens, etc. in bowl in order - top w/ cheese. Put in dressing & toss to serve.

Poppy Seed Dressing

3/8c sugar
1/2t dry mustard
little less than 1/4c vinegar
3/4T onion juice
1/2c oil
3/4T poppy seeds

(makes about 3/4c dressing)

(*ED NOTE: Onion juice, after a quick google, is what you get if you shred an onion on a box grater and squeeze out the juice. Easier to use a juicer, but man, I wouldn't want to drink anything out of that juicer after the onion goes through it.)

Marinara Sauce

1 28oz can progresso crushed & peeled tomatoes
1 8oz hunts tomato sauce
3T oil
1 med. onion, chopped
2 cloves garlic, minced
1t basil
S&P
sugar

heat oil over med. flame. Saute onion & garlic til soft (don't let garlic get brown). Add diced tomatoes, tomato sauce & spices, simmer 20 mins.

Put a little less than 1/2 of the tomato in blender, leave the skins on.
then add:
diced up (remaining) tomatoes
green onions chopped fine / or white onions
jalepena salsa
celery seed (not too much)
vinegar (very small amt.)

Cranberry Jello Salad

1 lg can & 1 small can crushed cranberries - jellied or berries
lg strawberry jello (use less water, 2c hot, 1c cold)
finely chopped celery & nuts

put in large brass mold. Let jello set till syrupy- mix cranberries in good. Use sour cream plus little lemon juice & sugar for dressing. Put mold in hot water (count to 3 slowly) to unmold.

1c mayo
2T sugar
2T vinegar

Shred cabbage, add green onions

Apricot-Cream Dressing

1/2c dried apricots
3T confectioner's sugar
1c heavy cream, chilled

Place apricots in bowl, pour enough boiling water to cover. Let soak 10-15mins, drain in sieve. Save 1/4c soaking liquid. Combine apricots & 1/4c in blender f/15 seconds. Scrape down, blend again for a puree. Stir in sugar. Whip cream until stiff. w/spatula, put puree over cream & fold together gently.

Dressing for Fruit Salad

10oz pkg. frozen strawberries (thoroughly defrosted with syrup)
1.5c sour cream
pinch salt
(little conf. sugar if desired)

Crush berries - add sour cream, salt & blend. Add sugar for sweetness. (Chill at least 1 hour)

Shrimp Tomato Vinigarette

2 large sliced tomato on curly lettuce
Marinated tiny shrimp & capers in vinegar, oil, S&P, garlic powder & dry mustard. Pour over all

House Dressing

2T lemon juice
2T vinegar
1t salt
1/2t pepper
1t dijon mustard
1 clove garlic
1/2c salad oil
1/2c olive oil

Combine first 6 ingredients in food processor and with machine running, add oil. Use with basic mix of salad greens and vegetables.

(*ED NOTE: There's a note that says "Too tart, cut down mustard and lemon juice")

Sweet and Sour BBQ Sauce

3/4c apricot preserves
1/4c soy sauce
1/2c mayonnaise
1t ground ginger
1/2c catsup

Wisk ingredients together until smooth. Brush on food turning frequently, during last 20 mins of cooking. Makes 1.5c.

Fried Rice

Get couple thin pork chops, cut in long slivers
saute in margarine and oil (1/2 and 1/2). take out.

Boil & cool rice ahead. Then add mix to lot of marg. and stir to brown. Add sliced green onions, pork, soy sauce after, onions and eggs last. S&P.

beat up couple eggs slightly. Mix in long strips pulling fork through.

(*ED NOTE: As always, make sure your pork is cooked all the way. Same goes for the eggs.)

Salsa Semplice di Pomodoro #1 (Plain tomato sauce #1)

1 lg can tomatoes
4T olive oil
2 sliced onions
1 clove garlic
1 sprig sweet basil
S&P to taste

Fry sliced onions and garlic in oil about 5 mins, add basil. Strain tomatoes through sieve; add and simmer for 45 mins or until tomatoes are cooked to a thick sauce. Stir frequently. Add S&P; stir thoroughly. Simmer 15 mins.

(*ED NOTE: Recipe also calls for 1/2t sugar, but various notes say that the sauce is too sweet with it)

Good Easy White Sauce / Spaghetti Linguine

Mash cloves garlic, sweet basil leaves, fresh parsley in bowl. Add soft butter & olive oil. Mash all together until it makes smooth paste. Serve & toss w/ hot linguine.

Pesto Lasagne

2c parsley sprigs, packaged
1/2c veg oil
2T soy sauce
2 cloves garlic
1/2c chunked onion
1T basil
1 8oz can tomato sauce
2t soy sauce
1/2t oregano, crumbled
1pkg (8oz) wide lasagne noodles (cooked)
3/4lbs creamy havarti, thinly sliced

Combine parsley, oil, 2T soy sauce, garlic, onion & basil in a blender (*ED NOTE: or food processor). Blend off & on until smooth, set aside.

Combine tomato sauce, 2t soy sauce & oregano. In the following order, place 1/3rd noodles evenly in 1.5qt baking pan. Spread all of pesto sauce over noodles.

Top evenly w/ layers of 1/3 noodles, 2/3 cheese, remaining noodles, tomato sauce mix & remaining 1/3 cheese. Cover with foil, bake 350°F oven for 40 minutes. Let stand 5 min before serving

Buy package Italian bread (2 in package)

Cover w/ classico spaghetti sauce w/basil
slices of tomato, green onions, low-fat mozzarella cheese, sprinkle w/parmesan

bake according to italian bread directions f/8-10mins

Sauce for Pasta

1/2lb sliced mushrooms
3T olive oil
S&P
2 large cloves garlic, crushed
1c butter (w/little olive oil)
1c parsley (measure then chop)
1c parmesan

(For 1 lb of pasta)

Saute mushrooms in olive oil til tender, season. Heat garlic in butter til golden, stir in parsley. Pour parsley butter, mushrooms, parmesan over hot pasta, stirring as you add.

(*ED NOTE: 1c sour cream is crossed out)

Three school age children make for a busy cook, but this cook loves every minute of it. She's Mrs. Richard Walker and her winning recipe is "Taco Salad".

Originally from Tacoma, Washington, she has lived in Costa Mesa for the past 10 months. When not engaged in housework, she likes to swim and play tennis. To broaden her education, she is taking a course at Orange Coast College.


1 small head lettuce, shredded
1/2c shredded cheddar cheese
1 small onion, chopped
10oz can stewed tomatoes
1lb ground beef
2-3T taco sauce (optional)
5oz package corn chips or tortilla chips.

Place shredded lettuce, cheese and onion in large salad bowl. Drain stewed tomatoes well. Save juice. Add tomatoes to salad mixture in bowls. Brown beef, pour off grease. Add juice from tomatoes and taco sauce and simmer for 5min. Add this mixture to salad bowl along with broken up corn chips. Toss lightly. Serve at once.

Spinach Wilted Salad

(*ED NOTE: Different dressing recipe on this one than the previous, but still the same result.)

Fry 4 slices bacon out until crisp. Add 1/4c vinegar, 2T water, little bit of worch. sauce, heat, pour over 1qt greens tossed w/2 green onions, 1t salt & pepper. Sprinkle 1 hard-cooked egg, chopped, over top.

Wilted Spinach Salad

Cut roots and tough stems from 1lb young spinach. Wash, drain, blot dry w/paper towels. Tear into bite sized pieces.

Mince 6 green onions, mix w/spinach. Mash 1/2 clove of garlic, cover w/ 1T salad oil, let stand 1 hour. Discard garlic. Trickle garlic oil over spinach and let stand.

Saute 3 slices bacon until crisp. Drain, reserve bacon fat. Beat together 1 egg, 1T sugar, 1t tarragon, 1T red wine vinegar. Pour slowly into warm fat, stirring constantly until slightly thickened. Season w/ S&P. Pour over spinach mix & toss well, crumble bacon bits over each salad & serve with sliced egg yolk.

Grandma's Layered Salad

1c mayo mixed with 2T wine vinegar
1 head iceberg lettuce, shredded
2-3 green onions, sliced thinly
3 large carrots, grated
2 stalks celery, sliced thinly
1/2pkg tiny frozen peas, thawed and drained
3 hard boiled eggs

Layer 1/2 of all vegs and eggs, spread 1/2 mayo and sprinkle 1t sugar over mayo. put second layer vegs, eggs, mayo and 2t sugar.

Put in frig overnight (best in a straight sided glass bowl)

Before serving, sprinkle with cooked, crumbled bacon.

TRY WITH GRATED CHEESE TOO!

Salade Nicoise

3 heads butter lettuce
4 cups drained tuna
12 ripe olives
10 anchovy fillets
4 quartered hard boiled eggs
3/4c cold blanched green beans
3t capers
1/2 julienne red and green peppers
6 halved cherry tomatoes
1/2c chopped parsley and basil
2 small red potatoes, cooked and quartered w/ skins

Layer salad bowl with leaves of butter lettuce, add tuna, olives, anchovies, eggs, beans, capers, peppers, tomatoes, parsley. Toss at end w/ dressing.

DRESSING:
1/4c fresh lemon juice
3/4c olive oil
1 pressed garlic clove
3/4t salt
1/2t ground pepper

Tropical Chicken Salad

4 boneless chicken breasts
1/4c olive oil
3T red wine vinegar
1t dijon mustard
1/4t dried sage
6c salad greens
1 papaya, chopped
1 mango, chopped
1 6oz basket raspberries
1T minced fresh mint
1/2c chopped TOASTED walnuts or pecans

Preheat oven to 425°, place chicken in baking pan, season with S&P, bake about 20 mins, cool, cut into bite sized pieces.

Whisk olive oil, vinegar, mustard and sage to blend. Combine chicken, greens, papaya, mango, raspberries and mint in large bowl. Add dressing and toss, sprinkle with walnuts.

Crab Sandwiches (Diet)

English muffins, split, lightly use margarine & lite mayo

Pile on good canned crab, slices of tomato & avocado & green onion. Sprinkle with parmesan cheese.

Shrimp Marinade

1c olive oil
1 head garlic, peeled and coarsely chopped
white pepper
48 large shrimp

marinate overnight

salt and grill 2-3 minutes on each side

Shrimp Creole

1/2 lb shrimp, raw fresh
onion, chopped
green pepper, chopped
celery, chopped
garlic, minced
1-1.5T margarine
1 16oz stewed tomatoes, chopped
1t worch. sauce
1/4t oregano
1/4t thyme
red pepper

Saute veggies until tender, add tomatoes, worch sauce, seasonings. Cook about 15 minutes. Stir in shrimp & simmer 5-10 mins until shrimp are done. Serve over rice.

Scallop-Artichoke Stir-fry

Pam (*ED NOTE: Nonstick spray)
1 14oz can artichoke hearts, quartered (Wash citrus acid off)
2c sliced fresh mushrooms
1/2c julienne cut green bell pepper
1/2c julienne cut red bell pepper
2 cloves garlic, minced
1t veg oil
1lb sea scallops
1T cornstarch
1t sugar
3/4c chicken stock
1/8t pepper
2T lime juice
2c cooked long grain brown rice

Coat skillet w/pam, place over hi heat until hot. Add next 5 ingredients, stir fry 5 mins. Remove and set aside. Add oil, place over hi heat until hot. Add 1/2 of scallops, stir fry 2 mins, remove, repeat with rest of scallops. Add cornstarch and next 5 ingredients to pan, stir well. Cook 1 min until thickened and bubbly. Return veggies and scallops, stir well. Cook just until thoroughly heated. Serve over rice.

Ciopinno (Cho-pee-no)

Slice 1/4 lb fresh mushrooms, 2 carrots, crush clove of garlic. Chop 1 small onion and some green pepper. Saute all in 2-3T oil in heavy pan. Stir in 1 15oz can tomato sauce with herbs, 1 can beef bouillon, 3/4c water, 1c dry red wine, 1/2t italian herb seasoning, 1/2t salt and 1/4t pepper. Cover, simmer for 20-30 mins, stir occasionally. Add 1lb fresh sea bass or ocean perch (cut in 1" pieces), 12 clams, king crab meat (from 1 large claw), few scallops cut in chunks, 1/4lb small shrimp, lobster if available. Add some fresh chopped parsley, cover and simmer about 20 mins longer. Serve with S.F. french bread.

Shrimp de Jonghe

12T butter
1t salt
1-2 cloves garlic
1c bread crumbs
1/3c minced parsley
tiny bit of dry sherry
dash cayenne pepper
dash paprika
2lbs large shrimp

combine together butter, salt and garlic, mix in bread crumbs, parsley, sherry, pepper and paprika. Preheat oven to 375°. Butter flat casserole, put shrimp in bottom. Mound crumb mixture on top. Bake 20 mins or until golden brown and sizzling. Serves 6.
